With all the different Carribean countries producing rum and rum variants using archaic, traditional methods, the peak of these spirits can reach absolutely skyscraper-esque heights. Clairin is Haiti’s local un-aged clear spirit that is produced by hundreds of micro distilleries, each with their own respective terroir. Clairin Vaval is produced near the village of Cavaillon from the Madame Meuze sugar cane variety.
