After malolactic conversion the wine rests before bottling and a further period in bottle to let it come together. Grillo's natural tendency toward richness and low acid is kept in check here by the vineyard's altitude and airflow, producing a wine with real freshness alongside its weight: citrus and orchard fruit up front, a saline undercurrent, and enough texture to stand up to food.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eThe People\u003c\/strong\u003e\u003c\/p\u003e\u003cp\u003eVincenzo and Graziella Gurrieri spent fifty years farming grapes and olives for their own family's table before their children, Giovanni and Angela, decided to turn the family's land into a commercial winery in 2010. Giovanni now runs production from 3.2 hectares around Chiaramonte Gulfi and Mazzarrone, farming organically and working almost exclusively with native Sicilian varieties: Nero d'Avola, Frappato, Grillo, and some Syrah. Production stays small on purpose, around 3,000 bottles per label, a scale that lets the family farm and bottle by hand rather than by machine.
