Alois Kracher used to point at those swells and call them mountains. Neusiedl itself, the largest of the countless shallow lakes scattered across the plain, is less than five feet deep in most places, and the whole mosaic of reed beds, salt pans, wet meadows and sand steppe has been protected since 1993 as the Neusiedler See–Seewinkel National Park, some 300 square kilometers straddling the Hungarian border. The climate is Pannonian: hot dry summers, hard winters, and cool autumn evenings when evaporation off the water lays a heavy fog over everything until the sun burns through around midday. That fog is what makes Illmitz the world capital of botrytis. It is also, far less famously, a very good place to grow red grapes.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Wine\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eOne hundred percent Zweigelt, picked in Illmitz from the sand and gravel soils the estate farms between the village and the lakeshore — and, the label insists, trocken. Dry. From the cellar best known for the sweetest wines on earth. Kracher gives this red an unusually long stretch in used oak, a scale of élevage almost never applied to a bottle at this price, which is why it arrives already resolved instead of asking for cellar time. It pours deep ruby with violet at the rim. The nose runs to sour cherry and ripe red cherry lifted by something floral, with a thin thread of vanilla behind it; the palate is juicy and open, plum and dark berry with gentle spice, tannins soft and fully knit, acidity sitting in the medium range and keeping the whole thing in motion. The 2019 season across Burgenland brought the hottest June on record and a dry summer that shrank berries and cut the regional crop roughly 28 percent against 2018 — punishing for volume, excellent for red wine concentration. Growers there called it one of the decade's best red vintages.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe People\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe Kracher name is a synonym for Trockenbeerenauslese. Alois Kracher — Luis — built that reputation out of Illmitz through the 1980s and 1990s, making ten to fifteen different TBAs in a single vintage across two house styles: Zwischen den Seen, raised in large wood and steel for freshness and primary fruit, and Nouvelle Vague, raised in barrique for depth and length. Britain's \u003cem\u003eWine\u003c\/em\u003e magazine named him Winemaker of the Year seven times, in 1994, 1997, 1998, 2000, 2001, 2006 and 2008, by the estate's own accounting. He died in December 2007. His son Gerhard, born in 1981, took over that year and runs the estate in the third generation alongside his partner Yvonne, having worked in France and California before coming home. The sweet wines remain the calling card. Roast goose or duck with red cabbage is the local answer — the acidity cuts through rendered fat while tannins this soft never bully the bird. Beef goulash heavy with sweet paprika works because there is just enough grip for braised meat without the wine picking a fight with the pepper. A grilled bratwurst with sharp mustard meets its match in cherry fruit set against fat and vinegar. And a wedge of firm, nutty Alpine cheese pulls the oak spice forward and lengthens the finish.
