Winemaker Gina Hildebrand is inspired by the wines of the Loire Valley and makes her California wines from the same grapes in a more vibrant, more electric style, with plenty of love and minimal sulfur. Her most recent vintage is 100% Sauvignon Blanc from Stolpman Vineyard in Ballard Canyon, 15 miles from the Pacific coast. The grapes are foot tread and rest on their skins overnight before a native yeast fermentation in neutral oak barrels. It’s aged with its yeast for 8 months before unfiltered bottling. I LOVE this juice so much. Perfect for summertime. Think honeydew, preserved lemon, and olive oil cake.
