Pascal Doquet 1er Cru "Le Mont Aimé" Brut 2006
100% Chardonnay, bottled in April 2007 and disgorged May 2, 2017. This Blanc de Blancs comes from a unique isolated hill at the very south end of the Cotes de Blancs. The Mont Amié and its castle on top is an historically significant spot with an interesting political history. It's also geologically significant with an abundance of ancient fossilized fish.
The wine is rich yet bone dry at 3.5g/L and extremely mineral. Most Champagnes do not represent such a specific terroir and this is a distinctive treat from an interesting spot.
