Cuvée Sylvie is different. It comes entirely from the Pressonnier parcel, a 0.80-hectare plot within Gevrey-Chambertin itself, subject to the same clay-limestone soils and east-facing exposure as the village and premier cru appellations that surround it. The Côte de Nuits sits at roughly 250–280 meters above sea level, with soils transitioning from thin limestone on the upper slopes to richer clay-limestone lower down. That clay element, more pronounced in Gevrey than in Chambolle or Morey to the south, gives even the most modest wines from this village a structural backbone and savory character that generic Bourgogne from elsewhere rarely achieves.

The Wine

100% Pinot Noir, approximately 90% destemmed, fermented in open wooden vats with moderate extraction over roughly two weeks. The 2023 vintage was defined by significant heat waves in August and September, producing warm, concentrated fruit across the Côte de Nuits. Cuvée Sylvie in 2023 is generous and forward: dark cherry, forest floor, a thread of violets, and soft tannins with a clean, direct finish. Like all of Sylvie's wines, it can show a reductive note right on opening. Give it 15–20 minutes in the glass and it opens cleanly. Bottled unfined and unfiltered.

The People

Sylvie Esmonin took over the family domaine from her father Michel in 1986. Before Sylvie arrived, the estate had sold its fruit to négociants. She changed course immediately, completing the first domaine bottling in 1989 from 3 hectares. The estate now covers 7.8 hectares across Gevrey-Chambertin. The family connection to Clos Saint-Jacques runs a generation deeper: Sylvie's grandfather worked for the Comte de Moucheron, then sole owner of the entire Clos Saint-Jacques vineyard, and purchased part of it when the count was forced to sell. Sylvie has farmed without herbicides since 1990 and works the entire domaine in practicing organic viticulture throughout, not certified but genuinely committed. Wines are racked by gravity and bottled without fining or filtration.

Food Pairing

Cuvée Sylvie is the lightest and most immediate wine in the lineup, built for the table rather than the cellar. Serve it slightly cool with roast chicken and herbs, a mushroom and Gruyère tart, a charcuterie board with cornichons, or pasta tossed with olive oil and good Parmesan. The kind of red that works for a weeknight dinner without requiring a special occasion to justify opening it.
