Val de Mer is a sparkling wine project by Canadian winemaker Patrick Piuze. 100% Pinot Noir fruit from the town of Tonnerre, located 10 miles from Chablis. The grapes are hand-harvested. After a short maceration on the skins for color, the juice is fermented and aged in stainless steel tanks before undergoing secondary fermentation. The wine is aged for 9 months on the lees before it is disgorged. There's no additional sugar (dosage) added to the wine, so you're just getting ripe, fresh and pure fruit quality in this wine. Always a favorite of ours that is dope as hell for 20 bucks.
