Distillerie Combier was founded in Saumur (Loire Valley) in 1834 by Jean-Baptiste Combier. Guy was a radical confectioner, and anti-cleric, who was arrested for his remarks against the emperor. Sounds like our kinda guy.
This absinthe showcases candied aniseed & fennel with a supporting herbal characteristic. Much less than bitter than a typical absinthe, this expression is recommended served with water sans additional sugar. Produced 1899-1915 with production started back up in 2006.
