The Land

Set in the rolling limestone hills of Prissé in the Saint-Veran appellation, Nicolas Delfaud’s vineyards sit at 350–410 meters in elevation, facing east to capture the morning sun while maintaining the freshness essential for great Chardonnay. The limestone-rich soils, long coveted by top domaines like Leflaive, lend the wine its signature mineral core, while the region’s cool nights help preserve acidity and balance. La Boisserole is set on a gentle slope just north of the town, and the vines are being converted to organic farming. 

The Wine

The 2022 Saint-Véran La Boisserole is pure, expressive, and finely textured. Indigenous yeasts and minimal intervention in the cellar allow this wine to unfold naturally, with aromas of ripe pear, lemon curd, and white flowers, accented by a saline edge. The palate is layered and balanced, showing zesty citrus, orchard fruit, and a fine chalky minerality, all carried by a lively tension that lingers through the finish. A touch of neutral oak rounds out the texture, adding subtle depth without overshadowing the wine’s precision. An incredible value White Burgundy!

The People

Nicolas Delfaud’s journey to winemaking was unconventional but deeply rooted in passion. Originally from the suburbs of Paris, he began his career as a sommelier and store manager in a small four-star hotel, where his love for wine solidified. At 32, he pursued formal winemaking studies at Mâcon Davayé, gaining hands-on experience at Château des Rontets in Pouilly-Fuissé before launching his own domaine in 2015. Renting 4 hectares of Chardonnay and Gamay in Verzé, he committed from the start to organic farming, believing that true wine is made in the vineyard. His first vintage in 2016 was made in a small garage behind a plastic curtain—a humble beginning that has since evolved into something remarkable.

Chardonnay, one of the world's most versatile and beloved white grape varieties, showcases a remarkable spectrum of styles, from the lean, mineral-driven expressions of Chablis in France to the rich, buttery, and oak-aged versions from California's Napa Valley. Its adaptability extends to cooler climates such as Burgundy, where it achieves elegance and complexity, and to regions like Australia's Yarra Valley, known for producing vibrant and fruit-forward renditions. This grape's ability to reflect its terroir, coupled with winemaking techniques, results in a wide array of profiles, including unoaked, crisp varieties with apple and citrus notes, to full-bodied wines with tropical fruit flavors and creamy textures.
