The Land

The Paul Nicolle Chablis Vieilles Vignes is sourced from 14 hectares of vineyards located in Fleys, Chablis, Chichée, and Béru, all of which are in or near the village of Fleys. The soils are the classic Kimmeridgian limestone, which is vital to the character of this region. These particular vines are 35 to 45 years old, and are managed with a clear emphasis on sustainability, having received High Environmental Value certification. The majority of the holdings for this estate are in the AOC Chablis classification, with holdings in two different Premier Crus as well.

The Wine

This 2023 Chablis is 100% Chardonnay that offers a textbook example of the region's classic style. The wines are fermented using selected and natural yeasts (depending on the tank) with malolactic fermentation and aged on the lees for 8 to 12 months in stainless steel tanks, with 10% of the wine seeing used barrels. The result is a wine that is light and crisp, with a clear focus on expressing the purity and minerality of the region. The style seeks to be fresh, vibrant and rich on the mid-palate, and is a great example of classic Chablis.

The People

Domaine Paul Nicolle is located in Fleys and has a history that traces back to the late 19th century. The estate was originally created by Paul Nicolle in the 1950's and revived by his grandson Charly many decades later. Charly now manages the domaine with his wife Lucie Thieblement, who was once a chef at a Michelin-starred restaurant. Their commitment to integrated farming methods, alongside a dedication to their terroir, and an interesting and unique style of vinification that is all their own makes this a truly compelling estate.
