The Land

Domaine Pattes Loup Chablis 2022 is produced from vineyards in Chablis, a region known for its challenging climate and distinctive Kimmeridgian soil. Thomas Pico farms 15 hectares of vines organically, a rarity in Chablis, with many of his vines being selection massale plantings from his grandfather. These vineyards are located on hillsides near Courgis and Preys, the highest altitude villages in the appellation, reaching up to 300 meters.

The Wine

This AC Chablis is crafted from vines over 60 years old. Fermented with indigenous yeasts, up to 40% of the juice is fermented in concrete eggs, with the remainder in stainless steel, and no oak is used. Expect a Chablis that is both concentrated and opulent, yet racy and intensely saline. It showcases a textured density and vitality, moving beyond simple minerality to express a complex and vinous character.

The People

Domaine Pattes Loup, meaning "wolf paws," is the creation of Thomas Pico, who established his estate in Courgis in 2005. Against the wishes of his father, Pico converted the family's 2.4 hectares to organic viticulture and implemented strict yield controls. Inspired by fellow organic Chablis producers Alice and Olivier de Moor, Pico is known for his dedication to natural farming and transparent winemaking. He hand-harvests and hand-sorts all grapes, ferments with indigenous yeasts, and employs an extended elevage, often up to 36-48 months, to enhance complexity and texture in his wines.
