This particular cuvée, from a parcel planted in 1956, showcases the innovative approach of Nicole Deriaux and her sons, César and Baptiste, blending tradition with contemporary winemaking techniques.

  • Soil Type: The east-facing Montmorain parcel benefits from calcareous soils that contribute to the wine's marked minerality and elegance, hallmark traits of L'Étoile's terroir.

  • Viticulture: Celebrating the marriage of Nicole's parents, this parcel's mature vines bring depth and concentration to the wine, enhanced by the lesser sun exposure which preserves the grapes' acidity and freshness.

  • Winemaking: Following the domaine's tradition, the wine spends its initial year in a large foudre before a selection is transferred to stainless steel, resulting in a non-oxidative Chardonnay that highlights its saline character and vibrant acidity. This process emphasizes the purity and intensity of the fruit, offering a fresh perspective on Jura's Chardonnay.

  • Tasting Notes: The Montmorain shows an obvious leesy quality on the nose with marzipan and creme fraiche over a chalky minerality. The fruit is not obvious but a subtle yellow apple and white peach. Minerality and salinity dominate the palate with the lees contact contributing to a full texture.
