The Land:
Cerasuolo di Vittoria, Sicily’s only DOCG, lies in the island’s southeastern corner, where dry, sun-drenched days meet cooling Mediterranean breezes. The vineyards, planted on a mix of sandy clay and limestone, sit at moderate elevations, ensuring freshness and balance in the wine. This terroir accentuates the bright aromatics of Frappato while lending depth and structure to Nero d’Avola, creating a wine that is both vibrant and age-worthy.
The Wine:
A blend of 60% Nero d’Avola and 40% Frappato, fermented with native yeasts in concrete tanks. No temperature control, no fining, no filtration—just pure, expressive fruit. Aged in large Slavonian oak botti for refinement without masking terroir. The result is a wine of lifted wild red fruit, blood orange, and Mediterranean herbs, framed by silky tannins, lively acidity, and a long, mineral-driven finish.
The People:
Founded in 1980 by three friends—Giusto Occhipinti, Cirino Strano, and Giambattista Cilia—COS is one of Sicily’s most influential natural wine producers. Their approach is simple: organic and biodynamic farming, spontaneous fermentations, and minimal intervention to let the land speak. Their Cerasuolo di Vittoria is a benchmark for the appellation, capturing the essence of Sicilian terroir in its purest form.
