The Land

Tucked into the schist-laced hills of Faye d’Anjou in the heart of the Anjou Noir, Domaine Stéphane Rocher’s vineyards sit on ancient soils of green schist, sandstone, and sandy silt. This is rugged, expressive terrain—soils that radiate warmth and minerals alike, yielding wines with energy and tension. The vines, organically farmed, are part of a small, mosaic-like 6.5-hectare estate, including parcels that date back over 45 years. These are living, breathing slopes, where nature is allowed to speak and no detail is overlooked—from hand harvests to minimal inputs in the cellar. The Loire’s cool Atlantic influence preserves freshness, while the schist gives the wine its backbone: a whisper of stone beneath the fruit.

The Wine

Grappe de Bulle is a zero-dosage Blanc de Noirs, crafted entirely from old-vine Cabernet Franc. Fermented with native yeasts and aged in the traditional method, the base wine rests for three years on the lees of Chenin Blanc before bottling. There is no fining, no filtration, and no dosage—just 13% alcohol, 0g residual sugar, and a piercing, mineral elegance. The wine opens with delicate mousse and aromas of red apple, grapefruit peel, chalk, and toasty goodness. The palate is nervy and precise, finishing bone dry with a salty edge and a fine thread of brioche that invites another sip. Gives Champagne a run for its money!

The People

In 2008, Stéphane Rocher left a career in communication in Paris to follow his calling: wine. Two years later, he found an abandoned farm in Faye d’Anjou and began restoring both the land and the cellar, releasing his first vintage in 2011. From the start, his philosophy has been rooted in organic farming, low intervention, and deep respect for terroir. Rocher is a member of the “En Joue Connection,” a collective of young natural vignerons in Anjou who are helping to redefine the region with authenticity and soul. With Grappe de Bulle, he’s created a sparkling wine that’s as approachable as it is distinctive—meant to be shared, celebrated, and savored by both the curious and the committed.
