The Land
Dominio de Pingus 'PSI' represents a unique collaboration between renowned winemaker Peter Sisseck and the dedicated growers of the Ribera del Duero region. This project focuses on rescuing and elevating the region's old, head-pruned vineyards, which often contain a mix of grape varieties, including up to 10% Garnacha and small amounts of other varieties, even white grapes like Albillo. Sisseck works closely with these growers, encouraging organic and biodynamic farming practices to restore the health of the soil and improve the quality of the fruit. These historic vineyards, with their diverse varietal mix, are at the heart of this project.
The Wine
The 'PSI' is crafted to capture the soul of Ribera del Duero. It employs simple, traditional winemaking techniques with long, gentle macerations and a relaxed élevage in a combination of large and small oak casks, and cement tanks, with little new wood. The wine offers an open and transparent window into its origins. The resulting wine showcases a harmonious balance of dark red and black fruits, along with notes of spice, earth, and subtle floral undertones. The palate is medium-bodied and elegant, with fine tannins and a refreshing acidity. This wine offers an authentic taste of Ribera del Duero, with a focus on purity and expression.
The People
Dominio de Pingus is the creation of Peter Sisseck, the Danish winemaker who has established Pingus as a true benchmark for Spanish excellence. With ‘PSI’, Sisseck has embarked on a mission to revitalize the region by empowering local growers, and to produce a wine that reflects the heart and soul of Ribera del Duero. His approach combines a passionate commitment to organic and biodynamic farming, along with a respect for traditional methods. Sisseck works tirelessly alongside winemakers like Pablo Rubio to elevate the quality of the region's fruit and to give back to the area that gave him the chance to create arguably Spain's most coveted wine. This project is a clear demonstration of his dedication to sustainability and a deep respect for the history and potential of Ribera del Duero.
