Cool-climate South African Chardonnay BABYYY. Sourced from Elgin, these vines are cooled by the intense, constant winds from the Atlantic Ocean, resulting in a long, slow ripening period. Growing in low-nutrient weathered shale soils, the vines produce small yields of concentrated fruit. Whole bunch pressed, indigenous yeast, and 10 months yeast contact in French oak barrels creates a rich, complex wine. Ripe but not tropical, textured but not creamy, oaked but not buttery. A truly delicious yellow apple delight.
