The Land

The Bairrada region, nestled between Portugal’s Atlantic coast and the limestone hills inland, offers a rare combination of maritime freshness and mineral-rich soils. Here, in the cool, misty pockets around Óis do Bairro, the native grapes Baga and Bical thrive. Bairrada’s proximity to the ocean tempers the warmth of the Portuguese sun, preserving acidity and finesse—essential traits for sparkling wine. The clay-limestone soils lend structure and a quiet saline character, grounding the fruit with a subtle earth-toned edge.

The Wine

Filipa Pato’s 3B Rosé is a méthode traditionnelle sparkling wine named for its roots—Bairrada, Baga, and Bical. Crafted with zero dosage, it is brisk, bone-dry, and unapologetically expressive. Pale rose in hue, it opens with scents of wild strawberry, blood orange, and crushed rose petals, with faint notes of oyster shell and fresh herbs. The mousse is fine, the acidity slicing and vibrant, carrying flavors of red currant, grapefruit, and a whisper of licorice. This is a rosé that moves with clarity and precision—never dressed up, just beautifully made.

The People

Filipa Pato, daughter of legendary winemaker Luis Pato, has carved her own path by championing biodynamic farming and indigenous grapes. Together with her husband, sommelier William Wouters, she farms without chemicals, vinifies with native yeasts, and works in tune with the lunar calendar. “Wine without makeup,” as she calls it. The 3B is an embodiment of that ethos: honest, alive, and crafted not for adornment, but for the pleasure of pure, transparent drinking.
