The Land
Domaine Pattes Loup Chablis 1er Cru Butteaux 2020 is sourced from the Premier Cru vineyard of Butteaux in Chablis. This south-facing vineyard features 50-year-old vines rooted in Kimmeridgian soil. Thomas Pico meticulously farms these hillside vineyards organically, employing strict yield control and hand-harvesting.
The Wine
This 1er Cru Chablis Butteaux is fermented with indigenous yeasts and aged in older oak barrels. Expect a wine that is both concentrated and opulent, yet maintains a racy and intensely saline character. This Butteaux bottling, like all of Pattes Loup's 1er Crus, is produced in extremely limited quantities.
The People
Domaine Pattes Loup, meaning "wolf paws," is the creation of Thomas Pico, who established his estate in Courgis in 2005. Against the wishes of his father, Pico converted the family's 2.4 hectares to organic viticulture and implemented strict yield controls. Inspired by fellow organic Chablis producers Alice and Olivier de Moor, Pico is known for his dedication to natural farming and transparent winemaking. He hand-harvests and hand-sorts all grapes, ferments with indigenous yeasts, and employs an extended elevage, often up to 36-48 months, to enhance complexity and texture in his wines.

Chablis, a village and region in northern Burgundy, is all about Chardonnay, making arguably the best unoaked versions in the world. The wines here are defined by a crisp acidity and a strong mineral backbone. The area's unique Kimmeridgian limestone soil, packed with marine fossils, gives the wines a distinctive flinty edge. One slope overlooking the village holds the seven Grand Cru vineyards, while Premier Cru sites are scattered along both sides of the Sereine River, which cuts the region in half. Chablis is the ultimate destination for highly mineral white wines.

Chardonnay

This method emphasizes ecological balance, biodiversity, and sustainability, aiming to produce high-quality grapes and wines while reducing environmental impact and promoting long-term vineyard health. Organic farming is not allowed to use Glyphosate.
