The Land
Les Paizets lies southwest of Sampigny-lès-Maranges in the Hautes-Côtes de Beaune appellation, perched just above the domaine’s “Les Côtes” parcel. Here, cooler winds and a classic mix of clay and limestone sculpt the fruit’s bright, lifted character. The roughly 50-year-old Pinot Noir vines are planted at a slightly lower density than those in “Les Côtes,” and benefit from the rugged natural beauty typical of Maranges: pockets of forest, craggy slopes, and a notably later ripening season than most of the Côte de Beaune.

The Wine
The 2023 “Les Paizets” offers a vibrant interpretation of Pinot Noir, shaped by both the high-altitude terroir and Domaine de Cassiopée’s minimal-intervention approach. Farming is in organic conversion, ensuring healthy vine growth and clean, expressive fruit. The resulting wine combines a fresh core of red berries with an undercurrent of subtle earthiness, supported by gentle tannins and a lively backbone of acidity. It’s a pure, energetic rendition of the Hautes-Côtes de Beaune, underscoring both the region’s cooler climate and the domaine’s dedication to preserving the unique identity of each vineyard site.

The People
Domaine de Cassiopée is the vision of young vignerons, Hugo Mathurin and Talloulah Dubourg, who put down roots in Sampigny-lès-Maranges in 2020 after formative experiences with Burgundian luminaries like Jean-Marc Roulot and Benjamin Leroux. Driven by a desire to craft lighter, fresher wines in the face of a warming climate, they set out to convert every plot under their care to organic methods. Their eight individual cuvées, including “Les Paizets,” reflect this passion for terroir-specific bottlings and signal a bold new era for Maranges, spotlighting the region’s untapped potential and natural elegance.
