The Land

Volnay sits on the Côte de Beaune's western slope, and Les Mitans occupies a narrow band of mid-slope that many consider the appellation's most classically proportioned premier cru. The Lafarge parcel is 0.39 hectares, planted in 1952 and 1976, on a southeast-facing site at roughly 250 meters elevation. Soils here are deep brown clay and silt over limestone bedrock, heavier than some Volnay sites, which gives Mitans its characteristic depth relative to the more silty ground higher on the slope. The appellation sits above Meursault and below Pommard; at its best, it pulls Pommard's structure into the orbit of Volnay's aromatic lift and finer tannin grain.

The Wine

100% Pinot Noir, destemmed entirely, fermented with ambient yeasts over a two- to three-week cuvaison. Aged 18 months in French oak, 15% new, then bottled unfined and unfiltered. The 2023 vintage was Burgundy's warmest on record. In Volnay, a hail event on July 11 caused 35 to 40% losses in certain plots; the surviving fruit was concentrated and ripe. The 2023 Mitans shows dark cherry, raspberry, and iron-tinged earth, with a plush mid-palate and tannins that are refined and quietly grippy. Mitans tends to show its fruit earliest among the Lafarge premier crus, though the underlying acid and tannin structure carries it for a decade or more.

The People

Domaine Michel Lafarge is one of Volnay's founding references. Michel Lafarge began bottling estate wine in the 1950s, when most Burgundy was sold in bulk, and spent decades building the domain's reputation for unfussy, site-driven Pinot Noir. He passed away in 2020 after more than six decades of winemaking. The estate is now run by his son Frédéric and granddaughter Clothilde, who have deepened the commitment to biodynamic farming, holding both Demeter and Ecocert certification. The winemaking approach has not changed: ambient yeasts, minimal intervention in the cellar, and no fining or filtration at bottling. 

Food Pairing

Roasted duck breast with cherry and thyme jus, lamb loin chops with rosemary and garlic, mushroom risotto with parmesan and butter, or a straightforward roast chicken with pan drippings. The tannin and acidity work as well with leaner preparations as with richer ones. A red that is specific enough to reward attention but forgiving enough to drink on a Tuesday.
