The Land

La Princée is Olivier Lamy's statement about Saint-Aubin as an appellation rather than a specific site — assembled from ten separate plots totaling 3 hectares across the commune, all planted between 1985 and 2000 on limestone and clay soils at the high elevations that define Saint-Aubin's character. The appellation sits above Puligny-Montrachet, on hillside parcels where thin soils over limestone bedrock produce Chardonnay with natural acidity and restraint. Unlike the single-vineyard premier crus, La Princée draws on the breadth of the entire commune, and that diversity of sourcing is part of what gives it complexity beyond its village classification.

The Wine

100% Chardonnay from high-density plantings across ten plots, pressed and fermented with ambient yeasts in large barrels (300 and 600 liters), predominantly used, with minimal new oak. Aged on lees for an extended period before bottling. The 2023 vintage was Burgundy's warmest on record; Saint-Aubin's altitude helped moderate ripening across the plots. The result is ripe but focused: white peach, lemon zest, toasted almond, and a clean mineral thread, with good acidity and length for a village wine. This is the entry point into the Hubert Lamy range, and Olivier has made sure the entry is worth the door.

The People

Hubert Lamy founded the domaine in Saint-Aubin in 1973 and passed away in October 2022. His son Olivier joined in 1995 and has built a reputation as one of the Côte de Beaune's most thoughtful winemakers through extended lees aging, minimal new oak, high-density planting, and a conviction that Saint-Aubin deserves more serious treatment than it typically receives. La Princée is the base of the range but reflects the same principles Olivier applies to the premier crus: let the terroir speak, give the wine time, do not rush it.

Food Pairing

Roast chicken with garlic and herbes de Provence, pasta with cream and morel mushrooms, pan-seared scallops with white wine and butter, or a simple fish gratin with gruyère. A village Burgundy that overdelivers for its classification and makes a strong case for Saint-Aubin as one of the best value appellations on the Côte de Beaune.
