The Land

Serracalcara is a new vineyard, planted in 2022 on the Serra San Bartolo promontory above Vittoria at around 280 meters. The name is the ground: serra for the ridge, calcara for the lime. This is ancient marine marl, sediment laid down when this part of Sicily was seabed, and it is a very different soil from the deep red sand that made Occhipinti's reputation a few kilometers away. Marl holds water and gives acidity; the elevation adds a night-time temperature drop that a hot island badly needs. Planting a white variety on a bare ridge and waiting for the vines to find their feet is a slow way to work, and it is the opposite of buying established old vines.

The Wine

100% Grillo, which belongs to western Sicily and the Marsala country rather than to this corner of the island, planted here on the argument that the soil suits it better than reputation would suggest. Fermented and aged in concrete for around nine months, with no oak involved at any stage, spontaneous fermentation with native yeast, and bottling unfiltered in the estate's usual manner. Production runs to roughly 8,000 bottles. The wine is lemon peel, green almond, white flowers, wild fennel, and a hard chalky salinity, with tight acidity and a finish that reads as tension rather than fruit. Young vines usually give something thinner than this; the marl seems to be doing the work.

The People

Arianna Occhipinti founded her estate in 2004 at twenty-two with one hectare of abandoned vines and released her first commercial vintage in 2006. She farms roughly 25 certified organic hectares across nine contrade around Vittoria, biodynamically since 2009, using native yeast, no temperature control, no fining, no filtration, and sulfur only at bottling. Having established what Frappato and Nero d'Avola can do on her home ground, she has spent the last decade planting whites at higher elevations on unfamiliar soils. Serracalcara is the newest of those experiments and among the more revealing.

Food Pairing

Cut for seafood and green vegetables. Raw oysters or clams, grilled prawns with lemon and garlic, a fennel and orange salad with olives, or spaghetti with bottarga. The salinity meets shellfish head on and the acidity handles olive oil and citrus without going flat. Serve it cold, and if you can leave a bottle alone for a year or two, do that too.
