  • Soil Type: The vineyard boasts grey/blue/red slate soils, which are highly draining, poor, and acidic, contributing to the wine's unique character.
  • Grape Variety: Primarily Mourvèdre, complemented by Carignan. Mourvèdre imparts structure and depth, while Carignan softens the edges.
  • Winemaking: The grapes are fed whole cluster into large concrete vats, where they undergo wild yeast fermentation without temperature control, maturing for 18 months.
  • Farming Practices: The vineyard is organically managed, avoiding fertilizers and systematic treatments. Natural cover crops are used to maintain soil balance, and sheep graze the vine rows in winter.
  • Tasting Notes: The wine features flavors of blackberry, black cherries, and liquorice, followed by herbaceous and gamey notes, resulting in a complex and robust profile.
  • Unique Qualities: This wine is a rustic expression of the land, embodying the spirit of the producers and their commitment to keeping the land pure. The high grass around the vine rows and the organic approach to viticulture contribute to its distinctiveness.
