The Land

The Bourgogne Blanc “L’Equilibriste” comes from a 1-hectare parcel of Chardonnay in the town of Talant, just outside of Dijon. These vines were planted by Marc Soyard in 2018. While Talant is located near Plombières-les-Dijon, this specific vineyard is across a small valley, exposing it to different weather patterns than the vines at Domaine de la Cras. The soils are clay-limestone, contributing to the wine's unique character. This site was chosen by Marc to explore a neighboring terroir that has been abandoned since the phylloxera crisis, and to provide a hedge against localized weather.

The Wine

This 2022 Bourgogne Blanc is 100% Chardonnay made with a focus on purity. It is made with native yeast fermentations and no sulfur added. It sees an elevage in used foudres for 6 months. Expect a fresh and bright aromatic profile with a core of white fruit, subtle citrus notes, and a clear expression of minerality. The palate is crisp and focused, with a vibrant acidity and a long, textured finish. This is a wine that seeks to showcase the specific terroir of the Talant site with minimal intervention, showing what the area can produce in an authentic and unmanipulated way.

The People

Domaine de la Cras was purchased by the city of Dijon in 2013, with the goal of finding a young winemaker to showcase the wines of the region, and to open the estate to the public. Marc Soyard, originally from the Jura, was chosen, and is now the sole manager. He previously worked at Domaine Bizot, and he brings that same hands-off, natural philosophy to this project. His focus is on organic farming practices, natural fermentations, and a clear commitment to showing a sense of place, while also experimenting with his different cuvees and aging vessels.

Its adaptability extends to cooler climates such as Burgundy, where it achieves elegance and complexity, and to regions like Australia's Yarra Valley, known for producing vibrant and fruit-forward renditions. This grape's ability to reflect its terroir, coupled with winemaking techniques, results in a wide array of profiles, including unoaked, crisp varieties with apple and citrus notes, to full-bodied wines with tropical fruit flavors and creamy textures.
