It is aged "sur lie," meaning it rests on its lees (spent yeast cells) for an extended period, which enhances its complexity and texture. Expect a wine with bright acidity, a saline minerality, and notes of citrus and green apple. The wine is typically lean and focused, with a long, crisp finish.
