The Land

The secret to this wine is in the map. Mikulski's two Chardonnay parcels for his Bourgogne Côte d'Or sit right on the border of the Meursault appellation, on the lower part of the slope where the soil is fine alluvial river sediment. Because the vines are effectively next door to the village, the wine drinks far more like a Meursault than a regional Bourgogne: rich, long, and built to keep. This is the smart-money bottle in a Meursault producer's range, the one that lets you drink the estate's hand and its terroir without paying premier cru prices.

The Wine

100% Chardonnay from 1.5 hectares, with vines planted in 1986 and 2005, farmed to organic principles though not certified. It ages about 10 months in oak barrels, then rests two months in tank before bottling, so the texture is round but the wine stays fresh. Expect ripe pear and apple, orchard fruit leaning toward marmalade and apricot, grilled nuts, nougat, and mountain honey, all carried on a full, supple body with a saline, peppery, genuinely long finish. It has the weight and the keeping power of the village up the road. The 2024 vintage in white Burgundy was cool and small-cropped, which kept this fresh and precise; give it a year or two and it fills out beautifully.

The People

François Mikulski was born in Dijon to a Meursault mother and a Polish father, grew up in Luxembourg, and learned wine from his uncle, the Meursault grower Pierre Boillot. He took over the family estate in 1991 with his wife Marie-Pierre, released his first vintage in 1992, and now works with his nephew Thomas. The domaine covers about 10 hectares, mostly Chardonnay, farmed to organic principles without certification. His whites are classic and generous but always balanced, made with restraint in the cellar: modest new oak, clean handling, and a focus on transparency to the site.

Food Pairing

A do-anything white Burgundy for the dinner table. Roast chicken with tarragon, seared scallops, a creamy mushroom risotto, or a breaded veal cutlet with gratin dauphinois. It also loves richer fish like salmon and cod in butter sauces. The weight handles cream and butter while the saline lift keeps everything fresh; serve it not too cold and it shows its Meursault side.
