The Land
Les Fourneaux is a right-bank premier cru located further east than any other in Chablis. It comprises three climats: Les Fourneaux, Morein, and Côte des Prés-Girots. Paul Nicolle’s Chablis 1er Cru Les Fourneaux specifically comes from the Côte des Prés-Girots climat, prized for its full southern exposure and natural shelter from cold northern winds. The vineyard’s steep slopes are planted on marl-rich, clay-limestone soils that contribute structure and mineral tension to the wine.

The Wine
Made from 100% Chardonnay, the 2022 Les Fourneaux is fermented and aged on its lees in large stainless steel tanks, encouraging a creamy texture while preserving freshness and vibrancy. The wine shows expressive aromatics and a full mid-palate weight without any influence from oak, allowing the pure minerality and crisp acidity typical of Chablis to shine through. With a name meaning “The Furnace,” this cuvée captures the power and warmth of its sunny vineyard site while maintaining the elegance and precision that define the Paul Nicolle house style.

The People
Rooted in Fleys since the late 19th century, Domaine Paul Nicolle was established by Paul Nicolle in the 1950s and revitalized decades later by his grandson Charly. The family embraces sustainable viticulture, holding HVE certification, and focuses on traditional winemaking that highlights terroir expression. Alongside the whites, Lucie and Charly have expanded the domaine’s portfolio to include a hand-crafted Crémant de Bourgogne, showcasing their dedication to quality and craftsmanship across styles. The domaine remains committed to producing fresh, vibrant wines that honor both Chablis tradition and their own distinct voice.

Chablis, a village and region in northern Burgundy, is all about Chardonnay, making arguably the best unoaked versions in the world.
