The Land
"Au Sud" means "in the south," and despite Verget's reputation as a Burgundy negociant built in the Maconnais, this cuvee looks past Burgundy entirely. The fruit comes from growers in the Luberon, in Provence, the same hill country where Jean-Marie Guffens bought Chateau des Tourettes in 1997 after growing restless with Burgundy's politics. The Luberon's limestone-heavy soils and elevation, vineyards here commonly sit 300 to 450 meters, keep nights cool enough for Chardonnay to hold onto real acidity despite a Mediterranean climate far warmer than Guffens' home turf. Labeled Vin de France rather than under a regional appellation, since Chardonnay has no official place in Luberon's rules, the wine lets Guffens work outside the constraints that would otherwise apply.
The Wine
100% Chardonnay, made only from first-press fruit, aged 80% in used barrels and the rest in stainless tank, with several rounds of batonnage over seven months. Aromas run toward apricot and white flowers, with a finely integrated, lightly toasted edge from the barrel time. The palate is fresh and full-bodied, richness carried by bracing acidity, with a light bitter note on the finish that keeps the wine from feeling soft. It's built to drink young, not cellared.
The People
Jean-Marie Guffens built his reputation in Burgundy, first at his own Domaine Guffens-Heynen in the Maconnais, then through Verget, the negociant house he founded in 1990 because he couldn't yet afford the vineyards he wanted to work with. Verget's whole model rests on buying fruit with the same meticulousness Guffens applies to his own estate: he and vineyard manager Julien Desplans, who joined in 2006, choose growers as carefully as they'd choose land, then direct the farming and often do the picking themselves. In 1997, Guffens bought Chateau des Tourettes in the Luberon, giving him both an estate and a network of growers in Provence. Au Sud draws on that Luberon network, a looser, sun-driven counterpoint to the more structured Chardonnays Verget bottles from Chablis and the Cote d'Or.

This Chardonnay's richness and acidity make it work with roasted chicken with lemon and thyme, grilled shrimp skewers, a creamy mushroom risotto, or a wedge of aged Comte.
