The Land
Most of this crisp, saline white comes from Lodi, a region better known for heat and old-vine Zinfandel. Borden Ranch and Clements Hills sit on Lodi's eastern side, where rolling ground climbs toward the Sierra foothills and evening breezes off the Sacramento–San Joaquin Delta cool the vines after hot days. Those conditions favor grapes from warm coastal Mediterranean climates. Verdelho, Vermentino, and Albariño all evolved to keep their acidity in the heat, so they stay fresh in places that would flatten Chardonnay. Tocai Friulano comes from the Talmage Bench near Ukiah in Mendocino County, and a little Sauvignon Blanc comes from Potter Valley's cold-night basin. Every component was grown organically.
The Wine
Folk Machine White Light 2025 blends 27% Tocai Friulano, 26% Verdelho, 26% Vermentino, 16% Albariño, and 5% Sauvignon Blanc. Each variety fermented on its own in stainless steel with native yeast, and lots were blended as their fermentations finished. Malolactic was partial, and the wine saw no oak. It was bottled early with a touch of residual CO2, which shows up as a faint prickle. Kenny wanted a lightly aromatic, textural white that is neither bone-dry nor fruity. Expect pear skin, lime zest, fresh almond from the Friulano, and a briny, sea-spray finish. 2025 was a cool, mild California season with no major heat events. Harvest ran up to two weeks late, and rain in September and October forced careful sorting.
The People
Kenny Likitprakong grew up on a winery. His father, Somchai, was raised in Bangkok, in a family whose patriarch had come to Thailand from China. In 1972 Somchai took over as general manager of Domaine Saint George in Healdsburg, and Kenny's mother came from Brooklyn. As a teenager Kenny cared more about surfing and skateboarding than wine. He followed his girlfriend to UC Davis and came out with a viticulture and enology degree in 2001. White Light has been part of Folk Machine since at least 2015, always a dry blend of unfashionable white grapes at an everyday price. Kenny still prices his wines the way he started, deciding what a wine should cost and working backward from there.
Food Pairing
Salinity, a little spritz, and bright acidity make White Light a good match for spice and fried food. Pound green papaya salad with lime, fish sauce, and fresh chiles. The wine's brine fits the fish sauce, and the spritz cools the heat. Fry calamari and serve it with lemon aioli, letting the acidity cut the oil. Try chicken souvlaki in warm pita with tzatziki and tomatoes, or zucchini fritters with feta and dill. This is the bottle to open while dinner is still on the cutting board.
