The Land
Meunier is usually cast as Champagne's blending workhorse, but Mont Martin makes the case that it can carry a single-parcel vintage wine by itself. The parcel lies in Villers-Allerand, a premier cru village on the northern edge of the Montagne de Reims just south of the city, where Maillart keeps Meunier on the plateau and Pinot Noir on the chalky slopes below. At Mont Martin roughly a meter of clay sits over the chalk. Clay holds water and suits Meunier, a late-budding grape at home on the cold plateau, while the chalk underneath keeps the wine from going soft. The vines were planted in the early 1970s by massal selection rather than clones, so the parcel carries genetic diversity most modern plantings lack.
The Wine
Nicolas Maillart's Mont Martin 2019 is 100% Meunier, labeled Extra Brut 1er Cru. The wine is fermented and aged entirely in 228-liter oak barrels for about 10 months, without malolactic, then bottled unfiltered. Recent vintages carried 1 to 2 g/L of dosage. The 2019 season began damp, with spring frost hitting about 5,000 hectares across Champagne, then turned to drought and two record heatwaves in June and July. Potential alcohol averaged 10.6%, yet acidity came in higher than 2018, a combination that favors tension. Picking began the week of September 11. In past vintages this wine has shown apple, lemon peel, a light smoky note and a touch of melted butter from the barrels; expect a silky, rounded mousse, clear saline lift, and a long, chalky finish.
The People
Maillart's cellar in Écueil runs on wood. He keeps about 400 barrels, buys only a few new ones each year, and uses some for up to 15 years, so oak frames the wine without flavoring it. Juice goes straight to barrel after one to one and a half days of settling. The cellar stays cold and malolactic is never induced; fewer than 10% of lots go through it on their own. Barrels are topped up and kept full for all but one month of the year, and nothing is filtered. He prefers barrel to stainless steel and has no interest in ceramic or glass. Mont Martin is where that method meets one parcel and one grape, with nowhere to hide.
Food Pairing
Barrel texture and orchard fruit call for richness. Roast chicken in a morel and cream sauce is the natural match, the earthiness of the mushrooms meeting the wine's smoky edge. Seared sea scallops over cauliflower purée with a little brown butter echo its creamy texture while the acidity keeps each bite fresh. A wedge of 24-month Comté brings nutty, crystalline salt to stand against the saline finish. Pork tenderloin with roasted apples and thyme ties back to its orchard fruit. Open it on a cold Sunday when dinner is the main event and there is time to talk about what is in the glass.
