The Land

Kamptal is usually summed up as loess country, but around the town of Langenlois two very different soils meet. Deep wind-blown loess blankets the gentler, lower slopes, while the steeper hills turn to slate and primary rock as the land climbs toward the Waldviertel plateau. Christoph Edelbauer's roughly 12 hectares spread across both, in sites such as Thal, Neuberg, Spiegel, Käferthal and Steinhaus. The climate is continental, with hot days, cool nights and clear winds pouring down from the Waldviertel forests. Loess gives Grüner Veltliner its soft body and peppery fruit, the rockier ground adds tension, and those cold nights hold the acidity. A Langenlois Grüner Veltliner draws on that mix rather than a single parcel.

The Wine

The Edelbauer Langenlois Grüner Veltliner 2025 is 100% Grüner Veltliner, bottled under the Kamptal DAC village tier. It spends six months in stainless steel, which keeps the fruit clear and the texture lean, and finishes dry at 2.3 grams of residual sugar and 12% alcohol. Early tastings point to fresh Golden Delicious apple, fine herbal spice, candied orange zest and a touch of melon, carried by bright acidity on a slender frame. The 2025 season in Kamptal started cool, with only isolated late frost in May, flowering about two weeks later than in 2024, and a cool, wet July. Neighboring Langenlois estates began picking around September 1, and the vintage favors exactly this style: light, lively, and built for drinking young.

The People

Edelbauer's path into wine was unusual. His family's vineyards had been leased out for a generation while his parents worked in science; his father taught conventional plant nutrition at Vienna's University of Natural Resources and Life Sciences. Christoph studied architecture, then in 2003 took the vines back to test whether organic viticulture could really work. It did: the estate has been certified organic since 2012. His training shows in the winery he designed in the Neuberg vineyard, completed in 2013, restrained in design, set into the landscape, and cooled with geothermal collectors. He keeps the operation small enough to oversee every step, aiming for "clarity without harshness," and Pinot Noir is his other obsession.

Food Pairing

This is a Grüner for the everyday table. Try Wiener schnitzel with lingonberry jam and a vinegary potato-cucumber salad, where the acidity resets the palate after every bite of crisp breading. Vietnamese fresh spring rolls with shrimp, mint, Thai basil and nuoc cham play to the wine's herbal spice. Grilled zucchini and fennel with lemon, feta and toasted pistachios matches its green, citrusy side. A falafel plate with tahini and pickled turnips works too. The bottle to open on a Tuesday when the fridge holds mostly vegetables.
