The Land

Most Prosecco comes from the hills of Conegliano and Valdobbiadene, but this one grows on the flat mainland behind Venice, on a soil that used to be seabed. The estate's Prosecco DOC vines sit over Caranto, a compact layer of maritime clay studded with calcareous nodules that formed in the Pleistocene era, somewhere between 11,000 and 2.5 million years ago. That ancient marine clay is the estate's signature, and it hands the wine a mineral edge you don't usually associate with Prosecco. The Venetian lagoon moderates the climate, and the vines are trained on the traditional Sylvoz system used across the flatlands of the Veneto.

The Wine

100% Glera made in the Charmat method: a still base wine goes through a second fermentation in sealed stainless steel tanks to capture the bubbles. What sets this apart is time. The second fermentation runs slow, at least eight weeks, which builds a finer, more persistent perlage than the quick industrial versions. The brut dosage keeps it dry and direct, letting the Glera and that Caranto minerality show without a sugar cushion. Expect a bright straw color, golden apple and white flowers on the nose, and a fruity, fragrant palate with clean flavor and good length. Serve it at 6 to 8 degrees.

The People

The estate farms two properties in the Veneto, one in Valpolicella and this one on the Venice mainland, both worked organically and certified. The wines carry EU organic certification and are certified vegan. Rather than chase the soft, sweet style that made Prosecco a global commodity, the focus here is on dry, mineral expressions that reflect the unusual Caranto soil, treating Prosecco as a wine of place rather than a formula. It is a serious take on a grape that is too often made carelessly.

Food Pairing

This is a natural aperitif, but it has the acidity to sit down to a meal. Pour it with a platter of raw oysters, fried calamari, a plate of prosciutto and melon, or a simple risotto with spring peas. Its dryness and fine bubbles cut through fried and salty food, while the mineral streak keeps it from feeling simple next to shellfish. Keep a bottle cold for whenever someone drops by.
