Barrika 'Txerri' is a unique Basque Country cider co-fermented with macerated local cherries. Crafted from a single-barrel selection of traditional Sagardoa, this blend defies skepticism by maintaining an authentic, rustic profile rather than drinking like a typical sweet fruit cider. Unfined, unfiltered, and still, it offers aromatics of green apple and soft cherry. The palate is dry with medium-plus acidity and a mild sourness (VA), featuring a fuller body than typical Basque ciders and a very mild cherry linger on the finish. At 6.0% ABV, it is a complex and refreshing experience.
Food Pairings: This high-acid and dry cider pairs nicely with the savory richness of a char-grilled ribeye steak or chorizo, the tartness and mild sourness cutting through the rich animal fats. The subtle fruit notes also go well with a rustic almond cake or cherry clafoutis. For a savory option, try a smoked Idiazabal cheese with quince paste.
