The Land

These wines come from the Colli Orientali del Friuli, the range of hills in Italy's far northeast that runs up to the Slovenian border, long regarded as one of the country's greatest white-wine terroirs. The Cuar vineyard sits around Corno di Rosazzo, on the region's signature soil, ponca: layered marl and sandstone laid down on an ancient seabed, poor and fast-draining, that gives Friulian whites their minerality and cut. The climate is a meeting point of cool Alpine air from the north and warmer Adriatic breezes from the south, which lets white grapes ripen slowly and hold their acidity. Friuli's eastern hills are, by wide agreement, one of the two or three finest white-wine zones in Italy.

The Wine

100% Sauvignon Blanc from the Cuar vineyard. Sauvignon has quietly become one of Friuli's calling cards, and on ponca it takes a more mineral, savory form than the loud, grassy versions made elsewhere. It is vinified in the classical Friulian way, focused on purity and freshness rather than overt oak or aromatics. Expect white peach, grapefruit, elderflower, fresh-cut herbs, and a distinct chalky, flinty minerality from the marl, with a taut, saline, dry finish. This is Sauvignon with restraint and a real sense of place, built for the table rather than the cocktail hour.

The People

Nec-otium is a Friuli négociant project with an unusual philosophy: each wine is grown and vinified in the cellar of the grower who farmed it, so every bottle stays true to its own place and hands. It comes from the world of Ronco del Gnemiz, one of Friuli's benchmark estates, run by Serena Palazzolo and Christian Patat. The Cav. Luigino Balozio wines are a project of the next generation of that family, farmed and made in the Colli Orientali with the same commitment to precise, mineral Friulian whites the family is known for.

Food Pairing

Friulian Sauvignon is a food wine first. Pour it with prosciutto di San Daniele, with grilled or fried seafood, with asparagus and a poached egg, a classic Sauvignon match, or with a herby fresh goat cheese. Its minerality and cut also make it a fine partner for sushi or a plate of raw shellfish. Serve it cold but not ice-cold so the texture shows. The kind of white that makes you rethink what Sauvignon Blanc can be.

Sauvignon Blanc, a white grape of significant character, is believed to have originated in the Loire Valley of France, where it continues to produce some of the world’s most iconic and expressive examples. This variety has also found success in Bordeaux, where it is often blended with Sémillon, as well as in New Zealand, where it has become a signature grape, and many other regions across the globe. Known for its vibrant acidity and distinctive aromatic profile, Sauvignon Blanc often displays a pronounced greenness, with notes of fresh-cut grass, herbaceousness, and sometimes even a touch of jalapeño, depending on ripeness and region. These traits are often supported by citrus fruits like grapefruit and lime, leading to wines that are both refreshing and complex, ranging from steely and mineral-driven to more tropical and fruit-forward styles.
