Beatification (020924) by Russian River Brewing Company is a remarkably complex American Wild Ale crafted through 100% spontaneous fermentation. Utilizing their signature "Sonambic" process, the wort rests overnight in a koelschip to capture wild airborne yeast and bacteria before being transferred to used wine barrels to patiently ferment and age. This meticulous traditional method produces vibrant tasting notes of bright citrus and rustic earthiness, culminating in a deeply tart finish. It is refermented in the bottle, creating a beautiful natural carbonation and a traditional layer of yeast sediment.
