The Land

Neuville-sur-Seine is in the Côte des Bar, the southern extremity of Champagne, 100 kilometers from Épernay. The Aube is geologically distinct from the Marne: Kimmeridgian limestone and clay, the same formation that runs under northern Chablis. This terroir produces Pinot Noir with darker fruit, firmer structure, and a saline edge that the more famous northern districts don't quite replicate. For decades, most Côte des Bar fruit went to the large houses to be blended anonymously. The domaine's six parcels of Pinot Noir, Chardonnay, and Meunier are certified organic since 2019, farmed with massal selections rather than commercial clones.

The Wine

100% Pinot Noir, with 15% vinified as red wine. Fermented 40% in neutral oak and 60% in stainless steel. Aged two years on the lees in bottle. Zero dosage (Brut Nature), no fining or filtering, 24 mg/L total SO2. The 2021 vintage in Champagne was exceptional: a warm, dry summer produced naturally ripe grapes with clean sugars; a cool August preserved acidity. Les Fontaines Rosé from this vintage shows strawberry, dried raspberry, blood orange, crushed limestone, and a saline thread through the finish. The texture is firm and precise rather than creamy.

The People

Domaine de Bichery is Raphaël and Hannah Piconnet. Raphaël trained in oenology at Changins in Switzerland and at Beaune, with harvests in Burgundy and Bordeaux before returning to the family estate. Their first vintage under the domaine label was 2015. Raphaël's background is viticultural as much as cellar-focused, which shows in the farming: organic certification was pursued from the start and achieved in 2019. The use of massal selections throughout the estate is a commitment to preserving the genetic diversity of the existing vines rather than importing clonally selected material from nurseries.

Food Pairing

Duck breast with cherry reduction, a charcuterie board built around pâté de campagne and jambon de Paris, tuna tartare with sesame and soy, or whole roasted chicken with properly crisped skin. Rosé Champagne without dosage has the structure to go through an entire meal rather than just the aperitif.
